I want to make sure I'm reading this correctly before we change up our second round. In Huttball teamplay, if a player is knocked out with a despair round 1, it won't count as a perfect team bonus any longer because they can make at most 11 rolls correct?

Yes, that means someone else needs to make the roll and make another resilience check.

For Huttball, if you're not interested in the Perfect Team bonus, can individuals roll the same skill for both of their rolls, in addition to the team duplicating rolls?

From the Huttball rules:

Threat rolled does strain per each Threat rolled and if three threat are roll the opposing team scores a goal instead. If the Character rolled a Despair on their turn the strain done is converted to wounds.

Is it a running tally on Threats for enemy scoring, like it is on Successes for the players? (So 2 threats on one roll and 1 threat on the next gives a goal to the opposing team?)

So if we did happen to roll a challenge die(1eC) on the second round check, can we roll a difficulty die(1eD) to replace its results? hypothetically..literally...factually speaking

Under the Aim maneuver in the Corebooks:

Target a specific item carried by the target, or a specific part of the target. This could allow the character to attempt to strike or shoot a weapon from an opponent’s hand, for example, or target an opponent’s limb to cripple him. If the character spends one maneuver aiming to do this, his next combat check suffers ■ ■ If he spends two consecutive maneuvers aiming, the combat check suffers ■ instead.

Since it would be a combat check that can target items (such as weapons held), is the damage of a successful attack then only applied to the item and not the person carrying it?

I'm asking to have combat options that doesn't involve hurting people. (Lightsabers don't come with a stun setting)
